8 Simple, 30-Minute Dinners Busy Moms Will Love

The goal on weeknights is to get dinner on the table in under 30 minutes!

Taco Bar

Tacos are a quick and easy meal the entire family loves. We have them probably once a week.
Taco meat takes about 15 minutes, especially when I brown several pounds of ground beef in advance and store it in the freezer for individual meals.
Just add cheese, a can of refried beans, and tomatoes for a full meal the kids just can’t get enough of.

Chicken, Beans, and Rice

A one-dish meal is great for getting dinner on the table in under 30 minutes while keeping cleanup fast and easy too. This recipe features canned pinto beans and tomatoes with chicken and rice for a dinner packed with protein.

Sausage Skillet

Start by frying sliced potatoes in a skillet with just a little oil, onion, and seasoning salt.

Then add sliced sausage rope and a drained can of green beans.

The kids like it with ketchup, but I love the blend of flavors all on their own.

Creamy Chicken with Bacon

Okay, so this one actually takes 8 hours to cook, but since you throw it all together in under 15 minutes, it totally counts. Plus, it’s wrapped in bacon so that’s a win in my book every time. Seriously, though, the crockpot is your friend during the busy week. Mix cream of mushroom soup, a little flour, and sour cream then pour over bacon-wrapped chicken. This sounds like it would be perfect over egg noodles, but it also suggests serving with rice or couscous.

Burger Night

Burgers and sides on the grill is a fast, easy meal that’s perfect for this time of year. We like potatoes or corn on the cob with canned vegetables or Bush’s baked beans and a quick salad. It has everything we need for a healthy meal with very little effort.

Tip: Cook the veggies and baked beans in a foil tin on the grill, and the kitchen stays clean (and cool on a hot day!).

Greek Pasta Salad

Quick dinner salads are a great way to get protein and vegetables all in one with time to spare. This pasta salad is made with a can of beans, cooked pasta, and lots of veggies. I also love to add leftover barbecue chicken and a can of black beans to a simple garden salad.

Meat and Potatoes

This one is super simple, but puts a well-rounded meal on the table in no time at all.

Pan-fry meat (we usually use chicken!), parbake potatoes in the microwave then finish in the toaster oven, and cook a can of vegetables on the stovetop.
Our most frequent variation of this meal is barbecue chicken, baked potato, and green beans. Pork chops, rice, and mixed vegetables are another favorite, all in under 30 minutes.

Quick Cassoulet

I love the versatility of pork and beans. (Also? Pork — yum.) For this recipe, a can of pork and beans is added to chicken, sausage, and vegetables for a quick, hearty casserole.

Homemade Corn Dogs Recipe

I just stumbled on this really great recipe for homemade corn dogs. I love this! Now I can buy healthy hot dogs and have control over exactly what my kids are eating. Organic ingredients etc. All credits to life-in-the-lofthouse.com

You will need:
1 1/2 cups yellow cornmeal,
1 1/4 cups all-purpose flour,
1/4 cup sugar,
1 Tablespoon baking powder,
1/4 teaspoon salt,
1 egg, beaten,
1 1/2 cups buttermilk (regular milk works too),
1 Tablespoon vegetable oil,
1 Tablespoon honey,
1 (10 count) package Hot Dogs,
10 wooden skewers or chopsticks

In a medium or large pot, add the oil. Turn heat to medium and heat oil to 350 degrees F.

In a large bowl, add the cornmeal, flour, sugar, baking powder and salt. Stir together. Then add the beaten egg, buttermilk, oil and honey. Stir until combined. (Batter should be a little thicker than pancake batter)

Remove hot dogs from package. Wipe them all dry with a paper towel (this will help the batter stick to them better) Insert one skewer or wooden stick into each hot dog.

Pour the batter into a tall drinking glass. Holding by the skewer, take one hot dog and dunk it into the batter, coating all of the hot dog.

Slowly remove from batter and let a little excess batter drip back into the cup. Immediately place it into the hot oil, while still holding the stick. Turn as necessary to brown all sides

Cook for 2-3 minutes, or until all sides are a deep golden brown.

Remove from hot oil and place on paper towels to drain grease. Repeat with all hot dogs.

This is a fun Christmas pizza that the kids can all help make, decorate and eat! All credits to rhodesbread.com. Click on the picture for the recipe.

You’ll need
16 Rhodes™ Dinner Rolls, thawed to room temperature,
1/2 cup Alfredo sauce,
1 1/2 cups grated mozzarella cheese,
pepperoni (2 sizes),
red, green and yellow peppers,
red pepper flakes

Place 16 rolls on a sprayed baking sheet in a pyramid shape starting with one at the top, two under it, then 3, then 4 and the last row 5 rolls. Leave some space between the rolls. Flatten and press rolls together to form a tree shape. Press middle of the rolls in, leaving the outside edge slightly rounded so the sauce and toppings do not run off. The trunk of the tree is one roll placed under the last row of 5. Tuck it under and flatten. Poke rolls several times with a fork to prevent bubbles from forming and pre-bake at 350°F 10-12 minutes. Remove from oven and allow to cool. Spread Alfredo sauce over the crust, then sprinkle with cheese. Decorate as desired with pepperoni, peppers cut into different shapes and red pepper flakes. Bake an additional 10-12 minutes or until cheese is melted and crust is golden brown.
